American Pancakes

My children love pancakes but I don't make them too often because they like the syrup even more!

I like to serve my pancakes simply with fresh berries and golden syrup, but you can also add extras to the batter such as blueberries or chocolate chips.

You can even colour the batter and have Rainbow Pancakes!

Ingredients:

200g self-raising flour

1 egg

300ml milk

Oil for cooking

 

Method:

1. Add the flour to a large bowl with a pinch of salt. Mix the egg and milk in a jug. Make a well in the centre of the dry ingredients and slowly add the milk mix, use an electric hand mixer to beat the mixture until a smooth batter is formed.

2. Heat a tsp of oil in a heavy-based frying pan. Add enough batter to make a pancake roughly 7cm across, don't add too many pancakes to the pan as it will lower the heat. Cook on the first -side until bubbles appear all over the top, flip over the pancake and cook on the second side for 2-3 mins, both sides should be golden brown.
