My children love pancakes, I don't make them too often because they like the syrup even more!
I like to serve out pancake simple with fresh berries and golden syrup, but you can also add extras to the batter such as blueberries.
200g self-raising flour
Oil for cooking
1. Add the flour to a large bowl with a pinch of salt. Mix the egg and milk in a jug. Make a well in the centre of the dry ingredients and slowly add the milk mix, use an electric hand mixer to beat the mixture until a smooth batter is formed.
2. Heat a tsp of oil in a heavy-based frying pan. Add enough batter to make a pancake roughly 7cm across, don't add too many pancakes to the pan as it will lower the heat. Cook on the first -side until bubbles appear all over the top, flip over the pancake and cook on the second side for 2-3 mins, both sides should be golden brown.
