Zesty Coleslaw


½ white cabbage, finely sliced

½ red cabbage, finely sliced

½ red bell pepper, finely sliced

1 red onion, finely sliced

1 carrot, grated

½ Bramley apple, grated


30ml Extra virgin olive oil

50ml Apple cider vinegar

2 tbsp dijon mustard

1 tbsp Brown sugar

3 limes, juice and zest

Parsley, finely chopped


1. Mix the vegetables with the mint and season.

2. Mix the vinegar, mustard and lemon juice and season to taste.

3. Pour the dressing over the vegetables and garnish with the chives.
