Icecream for Breakfast?

Ever wanted ice cream for breakfast? I know my kids have!! These yoghurt lollies are the next best thing, I serve mine to the kids with extra fresh fruit and homemade granola and the kids think they're getting ice cream!

Yoghurt Iced Lollies

Makes 8-10, depending on your mould

Ingredients

250g yoghurt, I use mixed berry

Strawberries

Blueberries

Raspberries

2 kiwi fruits


Method

  1. Slice the strawberries

  2. Peel, halve and slice the kiwi fruits.

  3. Push the fruits up against the sides of the lolly mould, use lots of fruit in the centre as well.

  4. Fill the moulds with yoghurt, tapping to bring any air bubbles to the surface.

  5. Freeze overnight.

  6. To release from the moulds, dip the mould briefly in boiling water. I serve mine with extra fresh fruit and homemade granola.
