225g plain flour
110g butter, cubed & cold
80g caster sugar
1. Add the flour and the butter with a pinch of slate to a food processor, blitz until the mixture resembles breadcrumbs, it doesn't take a lot of blitzing.
2. Add the sugar and give it one blitz to combine.
3. Add in the egg and blitz once or twice until a dough begins to form, tip the mix onto a lightly floured surface and bring together with your hands, do not knead, handle the dough as little as possible.
