Quick Beef Stew

Serves 6-8

My Quick Stew recipe is so quick and easy to make, its a firm family favourite of mine, a different use for beef mince!

Ingredients

1 Onion

400g Carrots

1kg Potatoes

500g Beef Mince

2 Beef Stock Cube

1 stock pot

A handful of fresh thyme

400 tin gram Baked beans

A large splash of Worcestershire sauce

handful Parsley


Method

1. Cut the onion into eight wedges. Roughly chop the carrots and the potatoes. 

2. Heat a large non-stick pan, add the mince and fry quickly, stirring all the time, until evenly browned. Crumble in the stock cubes and stockpot and mix well. Add the prepared vegetables, stir them around, then pour in hot water from the kettle until covered. Add the thyme and bay leaf. Bring to the boil.​

3. Reduce to a simmer, cover and simmer for 25 minutes, until the veg is tender. Stir in the baked beans and a generous splash of Worcestershire sauce and heat through. Season to taste and scatter with parsley.
