Mackerel Potato Salad

Fresh & healthy, this recipe takes just a few minutes to put together but is filled to brim with flavour and goodness.

 

I like to serve this salad with fresh homemade bread.

Ingredients:

300g new potatoes, halved

2 smoked mackerel fillets skinned and flaked350g new potato

100g crème fraîche

1 tbsp horseradish sauce

Juice of 1 lemon

2 eggs

50g cucumber, chopped into chunks

100g mixed salad leaves,(I like to include pea shoots)

Parsley, chopped

 

Method:

  1. Boil the potatoes in salted water for 10-12 mins.

  2. Boil the eggs in salted water for 7-8 mins.

  3. Add the creme fraiche and horseradish sauce to a large bowl and mix through most of the mackerel, (reserving some flakes for the top), season with ground black pepper and the lemon juice (you may not need salt as the mackerel is quite salty.

  4. In a large bowl combine a little lemon juice with approx 1 tbsp of oil, add the salad leaves and mix with your hands, season with a little salt and pepper, then add to the 2 serving dishes.

  5. Drain and peel the eggs cut into quarters lengthways.

  6. Top the salad leaves with the mackerel creme fraiche mix, garnish with the remaining mackerel flakes, some parley and a little more black pepper.
