Laverbread Chicken

Do you like crispy chicken skin?


This is my all-time favourite recipe for roast chicken, it’s quick and easy and packed with flavour, using one of my favourite welsh ingredients Laverbread!


1 large chicken

100g salted butter, softened

100g laverbread

1 lemon

2 cloves of garlic

Black pepper



1. Preheat the oven to 175 C fan.

2. Mix the butter with the laverbread, lemon zest and garlic and season well with black pepper. 3. Season the inside of the chicken and pop in half of the zested lemon. Use your finger to loosen the skin on the chicken breast and push in some of the butter.

4. Rub the rest of the butter all over the chicken.

5. Roast uncovered for 80-90 mins, check that the juices run clear.
