Filipino Pork Belly Adobo

Josie came to visit and showed me some of her favourite Filipino dishes. Josie described this dish as her ultimate comfort food, it was so quick & easy to make and required hardly any ingredients. I was lucky enough to eat this for my lunch that day & it tasted even better than it looked!

Ingredients:

Olive oil 2 lbs pork belly (cut into an inch cube thick)

2 tablespoons garlic minced or crushed

1 onion, sliced

3 bay leaves

4 tablespoons vinegar

1/4cup soy sauce

2 tbsp fish sauce

1 tablespoon peppercorn

Salt & pepper

1 tbsp. Oyster sauce

Method:

1. Combine the pork belly and fish sauce with salt and pepper. 2. In a pan heat the oil. Sauté garlic and shallot until lightly brown. Set aside. 3. On the same pan, brown the pork belly. 4. Add soy sauce, vinegar, whole pepper corn, and dried bay leaves then add the sautéed garlic and onion. 5. Simmer for 15 mins. If the sauce is too thick add a bit of water. 6. Then add the oyster sauce. 7. Key is to balance acidity and saltiness. If it’s too salty, add sugar and water. 8. Add salt to taste 9. Serve hot with rice and your favourite salad. We served ours with boiled rice and cucumbers and cherry tomatoes.
