Ingredients
For the simple syrup:
100g caster sugar
100ml water
A handful of fresh cranberries
For the cocktail:
1 lemon, sliced
1 orange, sliced
A handful of fresh cranberries
A handful of fresh mint
1 cup of gin
1 bottle of ginger ale
Lots of ice
Method
1. Make the simple syrup: In a medium saucepan, bring cranberries, sugar, and water to a simmer over medium, stirring to dissolve the sugar completely. Reduce heat to medium-low and cook until cranberries are tender but haven't burst about 8-10 minutes. Leave to cool, this can be made the day before and kept in the fridge. 2. In a large jug add the lemon, orange cranberries, simple syrup, mint and gin. Muddle this mix together with a wooden spoon. 3. Add lots of ice, fill to the brim with ginger ale, give it a good stir and enjoy!
