Ingredients:

150g butter

80g soft brown sugar

80g Granulated Sugar

2 tsp vanilla extract

1 egg

230g self raising flour

Pinch of salt

100g milk chocolate chips

100g dark chocolate chips

Method:

1. Preheat the oven to 170C fan.

2. Put the butter and sugars into a bowl and beat, until light in colour. Beat in the vanilla extract & the egg. Stir through the flour and with a wooden spoon, Add the chocolate chips and stir well. 3. Using a teaspoon, place balls of the dough on a baking tray and flatten.

4. Bake in the oven for approx 8 mins until they start looking cooked, they should be light brown on the edges and still soft in the centre.

5. Leave on the tray for a couple of minutes to firm up and then transfer to a cooling rack.

Top Tip:

The dough can be kept in the fridge covered for around 2 weeks, so make a large batch and you can have fresh cookies ready for the kids coming in from school!
